Slovacek Sausage Gumbo

  • 1 large onion, chopped
  • 1 cup chopped celery
  • 1 to 1-1/2 cups flour
  • 1/2 to 3/4 cup oil
  • 1tsp. salt (or to taste)
  • 1 pkg. shrimp/crab boil seasoning
  • 2 lbs. Slovacek Pork & Beef Sausage
  • 3 qts. water

In a large heavy skillet, brown flour and oil until a medium brown color (stirring constantly so as not to burn).

Add onion and celery, continuing to brown flour until a rich reddish brown color.

In a large pot, add Slovacek Sausage, water, and sealed seasoning packet.

Bring to a boil, being careful not to tear seasoning packet.

When boiling, add browned flour mixture to mixture in pot.

Simmer for 30 to 40 minutes. May be served over steamed rice or as is.
